The HARIO Dripper technique:
Insert the filter paper into the dripper.
Place the dripper over your mug.
Rinse the filter paper with near-boiling water and discard water.
Add 12g of coffee ground to a medium coarseness into the drippper.
Place the dripper over your mug.
Steadily pour water over the coffee, add just enough to saturate all the coffee and let sit for 30sec.
Steadily pour more water from the centre, with a circular motion, at a steady rate until the dripper is 3/4 full.
Extraction should take 3 minutes.

SWISS GOLD one cup filters are affordable, no fuss, tough as nails and easy to use. They produce plenty of body with great flavour clarity what is not to like.

The SWISS GOLD Technique:

Begin the process by preparing the water. Once the water is boiling, it's important to cool it before pouring to prevent scorching the coffee.

While the water is boiling, prepare the coffee. Always use fresh coffee and, if possible, freshly ground coffee.

Dose: For our method, we recommend using 2 generous tablespoons of ground coffee.

Grind: Having a perfect grind size is very important to success in brewing . Too coarse of a grind will result in under-extracted coffee. Too fine will choke the brew resulting in over-extracted coffee. We find that a medium grind is a good place to start.

Place the SWISS GOLD filter on top of your cup.

Remove the perforated insert and put ground fresh coffee on the gold plated filter foil.

Replace the perforated insert. First, using a slow, steady pour fill just enough into the SWISS GOLD so that it saturates the coffee grinds . Wait 15 seconds, then continue to slowly pour water into the perforated insert according to the capacity of your cup (or taste).

Remove the SWISS GOLD filter and DRINK!

Relatives and Friends of Carly are invited to attend her Funeral Service, to be held at Ashgrove Baptist Church, 7 Firhill Street, Ashgrove, Friday 29th July, 2011, commencing at 1 p.m.

No flowers by request of the Family, donations in lieu to The Amy Gillett Foundation will be gratefully accepted.

Carly started working at Brother in 2007 in 2009 she headed to Italy to pursue her cycling career with the Michela Fanini-Record-Rox squad and later the Cassina Rizzardi A Style Fionucci team. As many of you would remember Carly would return to Brother each summer to escape the European winter and reunite with family, friends and love ones.

Carly passed away 6th July, 2011, living her dream in Italy.

Cocoa like aroma, nuts, mild citrus acidity and a caramel and chocolate sweetness. This coffee has a medium body, and a sweet and nutty aftertaste.

About Panama Santa Teresa Estate:
La Finca Santa Teresa is located in the micro region of Piedra Candela, specifically high in the area known as Santa Clara. The property contains approximately 450 hectares in total, with 120 hectares of coffee production. Their varieties consist of Catuai, Caturra, and Typica and all production is above 1500 meters.

Panama borders Columbia and Costa Rica. Panama’s coffee producing areas are located in the regions around one of the highest inactive volcanoes of Central America, the Volcan Baru (3,475 m. / 11,400 ft.); Boquete, Volcan, and Renacimiento.

The uniqueness about Panama’s Coffees are the microclimates present, and its surrounding land full of rich nutritional and fertile soils, making these high lands perfect conditions to cultivate and harvest a great variety of special coffees.

Region: Oromia
Altitude: 1800-2000mtrs
Crop Year: 2010
Varietal: Heirloom Ethiopian

Clean, juicy sweetness, soft citrus acidity, rounded body, notes of dark fruits, berries and spice.

This coffee is from within the broad Oromia region and likely from a special location within Djima, close the Kaffa region. The coffee is grown at good altitudes ranging from 1750-2100meters and will be processed through one of the many excellent cooperatives such as Kenteri, Babu or Gera.

All these coffees are special preparation unwashed; which means only the ripest cherries are picked, sorted through flotation then hand sorted. The best cherries are then laid out on raised woven drying beds for 2-3 weeks and slowly and evenly dried.

About Oromia:

Oromia is one of the nine ethnic divisions (kililoch) of Ethiopia. Covering 353,632 square kilometers stretching from the western border in an arc to the southwestern corner of the country, its one of the largest states in terms of both population and area.

The huge region includes some of the smaller coffee sub-regions such as Bale, Illubabor, Kaffa, Sidamo, Welega and Jimma.

Our intelligence tells us…

The demand for greens continues to grow, supply is short and prices are high. Short-term prices have been swayed by external factors like the Japanese earthquake & Middle East situation.

Coffee which we bring into play and how it will effect us….

Brazil: The 2011 crop is short, some suggesting BIG time short. We believe that the new crop this year will be outrageously expensive right through 2012.

Ethiopia: Traceability, sourcing and securing top lots has been difficult for some time, this will exacerbated even further in the future. Any decent quality or specialty lots landing into Australia in the second half of 2011 are going to be expensive.

In summary…

Wholesale & retail prices are going to increase and by a good amount and prepare for the possibility that we might need to do it again!

Brother Espresso House Blend:

Upfront there is a strong berry/cherry sweetness from the Indonesian and Ethiopian.

A quicker roast of the Ethiopian is bring out wine/cherry notes at the start of the cup.

The Nicaraguan is highlighting orange and lime notes in the aftertaste.

Fifth Battery Seasonal Blend:

Very toasty and caramel at the start of the cup.

Mild acidity in the aftertaste with a peanut like finish.

About Costa Rica Cafetalera Herbazu...
The Herbazu Estate is owned by the Barrantes family and is both a well known and leading coffee producers the West Valley region of Costa Rica. It is one of the early pioneers in independent, small mill coffee farms. They grow a type of Villa Sarchi cultivar which is a dwarf mutation of Bourbon. The mill and drying patios are right in the center of the farm, which ranges from 1550 to 1700 meters.
The cup will surprise you with its winey, Kenya-like acidity

General Comments...
A bright, clean and light bodied coffee with a sweet and slightly nutty aroma. A lovely zesty acidity and sweetness are complimented by clarity and balance in the cup.

The Australian Barista Championship seeks to discover the best barista who embodies the following rules and guidelines from the WBC.

A Champion is someone who aspires to the following:

To promote the growth, excellence & recognition in the Barista profession.
To grow the Barista’s knowledge of and expertise in, the preparation and serving of specialty, espresso coffee through competitions.
To promote the knowledge and consumption of specialty coffee to the consumer through the Barista.

Baristas are required to serve 4 espresso, 4 cappuccino and 4 espresso based signature drinks (no alcohol) to 4 sensory judges. Technique is assessed by 2 Technical Judges and the process is overseen by 1 Head Judge. The Baristas are allowed to use their choice of coffee and must complete the presentation within 15 minutes to avoid a overtime penalties up until 16 minutes whereby the barista is disqualified.

Amazing Ken Evans Bike featured @ Fifth Battery

Daniel "Gypsy" Licastro built up this Ken Evans bike to feature in the Biking Brisbane exhibition (we decided to extended its time in the spot light) . The frame was built by Ken Evans (once owned the the Fifth Battery family) late 1980s for Dean Woods, who used it as a pursuit bike in the Australian cycling team. For more photos check out this.

Sierra Azul is sourced from a cooperative mill in Huehuetenango. It is just classic Huehue (unlike El Injerto which cups like what Antiguas used to be), fruity, winey acidity, medium body.

About HueHuetenango...
Huehuetenango is both a city and a municipality in the highlands of western Guatemala. It is located about 250 km west from Guatemala City on the Pan-American Highway & the last major city before the Mexican border.
The coffees from Huehuetenango can be exceptional for both its consistency and quality; some believe this is from the higher altitudes and remoteness of the region and that is has been least compromised by “advances” in mechanization and hybridization. While “Antigua” may be the better known Guatemalan region, many have begun to identify Huehuetenango as their favorite.
Huehue’s typically have distinct fruit flavors with winey acidity, medium body.

Cupping Notes:
A clean coffee with candied fruit, a buttery body and balanced by a lively acidity. Deeper rich fruits, some caramel sweetness and hints of cocoa as it cools tie the cup together.

Spent Saturday learning the Diedrich, creating a few profiles manually roasting and then recalling these profiles and letting the automation do its thing.
The automation system has blown us away!
This does not replace the job of the Roaster, you still need their skill set and experience to produce the roast profile.
But it is a tool which enhances the Roasters experience and allows him/her to hone their skills while recording the profile which then can be stored, recalled and duplicated obtaining consistent results time again.

Being mindful of availability and quality we set out to achieve the following.

Diedrich have advised that our new IR12 roaster should be ready to ship mid February.
Diedrich have also advised us that we are getting the very latest version of their automation software on our roaster (the first IR roaster in the world to get it, actually!). This brand new software was developed for the larger CR roasting plants, and Diedrich have decided to utilize the same platform on their IR roasters. This new system we are told is a step up in sophistication.

We set out a while back to create a new place which differs form our other coffeebars. Soon the people of Brisbane will be able to share in our joy and excitement for great coffees at Fifth Battery Coffee Roasters by Brother Espresso, 23 Warry Street Fortitute Valley.
Fifth Battery will open some time in the New Year barring any major catastrophe and BCC approval.
